“Mephisto” from the Domaine de l’Ecu is an elegant and aromatic wine, produced with the red grape variety Cabernet Franc, grown in the area of Nantes, in the Loire Valley. It is a variety that is very well expressed in this territory, so much so that it is vinified alone to enhance its character and its fine aromatic accompaniment. The choice of an aging in terracotta dolium fits perfectly into this logic of enhancing the fragrant fruity notes of the grape without weighing down the wine with hints of wood.
Full, flattering, round, expressive nose, on black fruits and small red fruits, blackberry, strawberry, currant, notes of white pepper. Suave attack, tense but charming mid-palate, still tight but velvety tannins, good volume, rich, deep, delicate, chiseled fruit, notes of sweet spices. A wine vinified to sublimate and respect the Cabernet Franc, a certain idea of ​​finesse and delicacy, no over-extraction in this bottle.
