It requires the Pinot Noir of the highest quality in order for the wine not to be “overwhelmed” and dominated by fad influence when choosing to use 100% new dishes. But if the wine’s quality is high enough, it can absorb the taste and acidity of the dish and you will end up but a wine that is wonderfully complex and extremely durable.
