Winemaker crafted this wine from a single block of fruit from Gisborne. This region was chosen as its warmer climate allows them to achieve positive flavours in Sauvignon Blanc at lower ripeness levels. The fruit was harvested at a mere 19 Brix and then cool fermented with an aromatic yeast strain. The wine was then prepped for an early bottling.
