The Champagne has a complex, layered profile thanks to ageing on its yeast for 11 years before disgorgement. It has a crystalline texture and smooth, long profile in the mouth with flavours of honeyed lemon, sweet yellow fruits, refreshing menthol, lemon and honey on toast.
