The Defaix family is a fourth generation of a family of vine-growers rich in personality. Bernard Defaix started the vineyard in 1959 with 2 ha. Vineyard holdings across the Chablis region of Burgundy have expanded to 27 ha including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations.
The Bourgogne Blanc is a similar concept to the Petite Chablis. It is solely based on the Chardonnay grape and ages on its fine lees for 8 months for texture in stainless steel. The main difference with the Bourgogne Blanc appellation is in the origins of the grapes—they don’t need to be sourced entirely from the Chablis appellation.

A ripe and attractively layered nose speaks mainly of floral and white-fleshed fruit aromas. There is fine intensity to the very rich and rounded middle weight flavors that terminate in a crisp bitter lemon-inflected finish.
