Jean-Michel Guillon, originally from Paris, transitioned from a career in aeronautics to winemaking. Over the years, he has expanded the estate’s holdings, focusing on producing wines that reflect the unique terroirs of the region. The domaine is known for its meticulous viticultural practices and commitment to quality, resulting in wines that are both expressive and age-worthy.
Made with selected and hand-harvested Pinot Noir grapes from the Premier Cru Les Champonnets, this red reveals all the elegance typical of the wines of Domaine Guillon. The rich limestone and marly-limestone soils of the region, combined with the care and meticulous work in the vineyard and cellar, and the aging in new oak, give it complexity, depth, and excellent aging potential.

The wine displays a brilliant color with deep ruby ​​tones. Its aromatic profile is broad and complex with notes of red fruits, spices, and undergrowth.
